•4-5 asparagus spears, cut in ¾ inch bite size pieces
•1 whole egg plus 3 egg whites (women), or 1 whole egg plus 5 egg whites (men)
* 1/4 cup chopped onion
•1 light sprinkle of your favorite cheese, if desired
1. Spray skillet with non-stick organic olive oil cooking spray.
2. Chop the asparagus and put in skillet until heated through with onion.
3. Add eggs and cheese and scramble until firm.
4. Serve with a side of fresh fruit.
